
If you buy organic chicken from the supermarket and find as I do, that it is extremely tough, then this is a great recipe.
Ingredients;
- 4 (tough as old boots) chicken breasts
- 1 teaspoon olive oil
- 2 tablespoons dried parsley
- Juice of one lemon
- Salt and pepper to taste
- Chop up the chicken roughly and blend in the food processor for about 2 minutes
- Add all the other ingredients and blend for a further 1 minute
- Scoop out handfuls of the resulting gloop and shape in to patties on a greased baking sheet (you may want to keep putting your hands under a running tap as the water stops the chicken from sticking to you)
- Bake in a preheated oven for 20-30 minutes at 180 degrees turning once
